Vibrant Beet Hummus is made of roasted beetroot, carrots, chickpeas, and tahini, which gives a vibrant colour and nutritious twist to classic hummus. Enjoy this bright, antioxidant-rich, fibre-rich, healthy fat that makes hummus more delicious. Enjoy its wholesome flavour and nutrients with your meals.

Ingredients

  • Beetroot, top and bottom trim (diced or sliced) – 120g 
  • Carrot trimmed (sliced) – 80g 
  • Tahini – 60g 
  • Lemon juice – 2 tbsp 
  • Garlic cloves – 2 nos.
  • Chickpeas cooked – 350g 
  • Olive oil – 60g 
  • Ground cumin – A pinch 
  • Salt – As required
  • Water – As required

Instructions

  • In a pan over medium heat, roast the carrot and beetroot with 1 tbsp of oil. Cook until tender, about 20–25 minutes, sprinkling water as needed to speed up the cooking process. Remove from heat and allow to cool.
  • Once cooled, add the carrot, beetroot, and tahini into a food processor and blend until smooth. Add lemon juice, ground cumin, garlic, and some of the chickpeas, then pulse until combined. Gradually add the remaining chickpeas in small portions, blending after each addition. Gradually pour olive oil while the processor is running, blending until the hummus becomes smooth yet remains thick and spreadable. If needed, add a small amount of water to adjust the consistency.
