This vegan shepherd’s pie is a wholesome dish that delivers the classic flavours of traditional shepherd’s pie without any animal products. It contains vegetable fillings, rich in protein and fibre, and uses herbs, tomato paste and soy sauce to bring deep intense flavours. Topped with a creamy and smooth mashed potato layer made with plant-based milk. The dish is baked until golden brown. This vegan twist on a classic comfort food is not only nutrient-dense and satisfying but also easy to make.

Ingredients

  • Onion (sliced) – 1 no. medium
  • Carrots (sliced) – 2 nos. 
  • Artichoke (sliced) – 1 cup (250g)
  • Celery stalk (sliced) – 2 nos. 
  • Mushrooms (sliced)- 1 cup (250g)
  • Peas – 1 cup (250g)
  • Tomato puree – 2 tbsp
  • Garlic cloves – 2 nos. 
  • Olive oil – 1 tsp 
  • Smoked paprika – 1 tsp 
  • Soy sauce – 1 tbsp 
  • Thyme – 1 tsp 
  • Rosemary – 1 tsp

 

For topping: 

  • Potatoes peeled and boiled- 3 nos. medium
  • Almond milk – ½ cup (125 g)
  • Olive oil – 2 tbsp 
  • Salt – To taste

Instructions

Preparation of the filling:

  • In a pan, heat olive oil on medium flame. To the pan add onions, carrots, celery and mushrooms and saute till softened. 
  • Add the garlic, smoked paprika, thyme, and rosemary and cook it for 1 minute. 
  • To the pan add tomato paste, and soy sauce and mix well. Add the peas and artichoke and cook for another 2 minutes. Add salt to adjust the seasoning.

 


Preparation of the topping:

  • Boil the potatoes in salted water until soft. 
  • Peel the potatoes and mash them with almond milk, olive oil and salt until it is smooth and creamy.

 


To make the pie:

  • Preheat the oven to 190℃. 
  • In a baking dish, spread the cooked filling evenly. 
  • Top it with mashed potatoes, and spread it evenly.  
  • Bake it for 20-25 minutes until it is golden brown. 
  • Cool and serve it.

  • It has many health benefits like lowering cholesterol, and blood pressure, improving liver health, improving digestive health, and has anti-cancer effects.
  • Artichokes also mimic the texture of chicken.
  • For non-vegetarian substitution, you can use chicken and for vegetarian substitution, you can use lentils to make it more protein-packed.
