Crispy Fish & Vegetable Fries is a delicious and nutritious twist on traditional fries that combines the delicious crunch of baked or fried fish with the goodness of crispy veggie fries. These can be had as a snack, light supper, or as a side dish.

Ingredients

For the Fish:

  • White fish fillets – 4 fillets  
  • Chickpea flour or oats flour – 2 tbsp
  • Egg white – 1 no.
  • Salt – To taste
  • Black pepper – To taste
  • Paprika -½ cup (125g)
  • Lemon zest -1 tsp 
  • Olive oil spray – a few spritzes 

 

For the Veggie Fries:

  • Sweet potatoes- 3 medium
  • Olive oil – 1 tsp
  • Sea salt – To taste
  • Black pepper – To taste
  • Fresh herbs – 1-2 sprigs
  • Garlic powder – ½ tsp 

Instructions

Preparation for Crispy Fish:

  • Preheat the oven to 200°C (400°F) and place the parchment paper on a baking pan.
  • Remove excess moisture from fish fillets and add salt and pepper on both sides.
  • In a shallow bowl mix oat or chickpea flour, baking powder, paprika, lemon zest, salt, and pepper and to create a thick batter add egg white and mix. If the consistency is too thick add a little bit of water.
  • To create a uniform coating, dip the fish fillet into the batter.
  • Place the fish fillets on the baking sheet. Bake for 15-20 minutes until it gets golden brown and crispy.


Preparation for Crispy Vegetables:

  • Sweet potatoes should be peeled and cut into thick fries. For crisp up soak the sweet potato in water for 10-15 minutes and pat dry with paper towels. 
  • In a bowl add sweet potato fries, sea salt, black pepper, garlic powder and 1 tsp olive oil and add herbs for extra flavour.
  • Place the seasoned fries on a separate baking sheet and bake for 25 to 30 minutes at 200°C (400°F). It is soft inside and golden and crispy on the outside. 
  • Place the fish fillet on one side of the plate. Arrange the veggie fries on the other side.

Healthy Tips & Facts

  • Both the fish and fries are baked instead of fried to reduce the overall calorie content.
  • Chickpea flour or oat flour is a lighter alternative to regular batter that reduces calories while maintaining crunch.
  • Using only 1 tsp of olive oil or skipping it completely helps cut down on unnecessary calories.
  • Sweet potatoes are low in calories and packed with vitamins, fibre, and antioxidants, making them a healthier alternative to regular potatoes.
